No-Carb, Gluten-Free Pizza Crust

I actually saw this recipe on Facebook ages ago and thought " I HAVE to try that"!  Of course I forgot about it for a bit and then once back on my "low-carb diet",  it all came flooding back to me in a "craving-pizza-but-cannot-have-it" sort of tummy growl.  This crust is so good and the fact that you can have pizza while dieting - PRICELESS!



Ingredients:

*  3 large eggs
*  1/4 cup grated parmesean cheese
*  1 large tub / 8 oz. Cream Cheese
*  Italian Seasoning (optional)
*  Garlic Salt (optional)

Your choice of Pizza Toppings:)



Mix all of the above ingredients in a bowl until smooth - just a dash of Italian seasoning and Garlic salt.  I add the Italian season and Garlic salt for just a bit more flavor, but it is very good even without the extra herbs.  Be careful adding too much garlic salt / salt as the parmesean cheese can make the crust salty on it's own.

Spread mixture into a greased, oven-safe, pizza pan (6"x9")- be sure it is a pan with sides on it as mixture will grow and spread as it cooks.  You want mixture to be about 1/2" thick all over - so if using a large pizza pan, you may want to double the recipe.  Bake at 180C / 350F until top is golden brown and all over is fluffy.  Do not worry if it has any bubbles or is lopsided (that's the eggs:)  As it cools, it will level out.  

Bring out of oven and treat as any other pizza base.  Add pizza sauce and all of your favourite toppings.  Cook as you would any other pizza and presto!  Perfect, yummy, diet friendly pizza! Enjoy!!
